In a statement of Dr. Ravinder Singh Rao a leading cardiologist explained the risk of oils used in potatoes. “With French fries, we’re often unaware of the type of oil used or how many times it’s been reused. Each time oil is reheated, it transforms into trans fatty acids, which pose serious risks to heart health,” explained Dr. Rao.
He stressed that trans fats can accumulate in the body, harming the heart and causing long-term damage. Even more concerning, Dr. Rao pointed out that eating one serving of French fries could have a cancer-causing effect similar to smoking 25 cigarettes.A study in the New England Journal of Medicine found that eating trans fats increases the risk of heart disease. This is because trans fats raise bad cholesterol (LDL) and lower good cholesterol (HDL), which can lead to blocked arteries and a higher chance of heart attacks and strokes.
Besides heart problems, trans fats are also linked to a higher risk of cancer. When oils are reused for frying, they produce harmful chemicals called aldehydes, which are known to cause cancer. A study in The Journal of Lipid Research found that these aldehydes can damage DNA and help cancer cells grow. The longer and more often oil is reheated, the more aldehydes are created, making French fries cooked in reused oil especially harmful.
