Behind this success is Gitanjali Rathore, who began her entrepreneurial journey not with a commercial kitchen but with a small room in her home. What started as baking for family and friends gradually evolved into a cloud kitchen, and eventually into Baker’s Blend, which opened its doors in December 2023. Q. Before Baker’s Blend became one of Udaipur’s most-loved cafés, it was simply a dream in your home kitchen. How did it all begin?

Baking has been a part of my life for as long as I can remember. I always loved experimenting in the kitchen, and that passion naturally stayed with me as I grew older. In 2018, I started baking professionally from a small room at home. Around the same time, I completed a three-month internship at Taj Vivanta, Gurugram, which gave me valuable exposure to professional kitchens.

Initially, my customers were friends and family. Their encouragement and trust slowly built my confidence. Although I had studied psychology and even worked in event management, I always felt that baking was where I truly belonged.

Q. Was there a defining moment that made you take the leap from home baker to entrepreneur?

It was more of a journey than a single moment.

In 2021, I started a cloud kitchen, hoping it would help me grow. But I soon realised that it wasn’t enough. I needed a bigger space, a stronger team and a place where people could actually experience the food rather than simply order it.

Home baking flourished during COVID, but the post-pandemic phase brought new challenges. That’s when I decided to take what I call my last leap of faith and open Baker’s Blend in December 2023. It was a risk, but sometimes you simply have to trust yourself.

Q. Baker’s Blend feels more like an experience than just a café. What was the vision behind it?

I wanted people to feel at home the moment they walked in.

Everything, from the lighter colours and soothing interiors to the music and overall atmosphere, was planned with that thought in mind. I wanted Baker’s Blend to be a place where people could slow down, relax and enjoy their time without feeling rushed.

The biggest compliment I receive is when customers spend hours here talking, working or celebrating with friends. That tells me we’ve created something beyond just a café.

Q. Your desserts have become the café’s identity. What is your philosophy when it comes to baking?

Quality always comes first.

Most of our sauces, buns and several other preparations are made in-house because we believe freshness and authenticity make all the difference. I never want to compromise on quality, even if it requires more effort.

Personally, I’m happiest when I’m baking, experimenting with recipes or working on new dessert designs. That’s still my favourite part of the entire business.

Q. How do you keep innovating while maintaining consistency?

Experimentation is a continuous process.

Every month, we introduce something new because around 15 to 20 per cent of our customers enjoy trying fresh flavours. At the same time, nearly 80 per cent come back for the desserts they’ve already fallen in love with.

So we have to strike a balance. Every new item goes through several rounds of trials before it reaches the menu. Unless we’re completely satisfied, we don’t serve it.

Q. Entrepreneurship is often a journey of trial and error. What has it taught you?

That learning never stops.

I’ve made countless mistakes over the years, and so has my team. Every mistake teaches you something valuable. The important thing is not to react impulsively but to understand what happened and improve from it.

Patience has become one of my biggest teachers.

Q. Leadership is about people as much as business. What has your experience been in building a team?

When we completed our first year, I realised how important it is to know your team personally.

Respect has to work both ways. If you genuinely value people, they’ll value your vision too.

Today, my team treats Baker’s Blend as if it were their own. That sense of ownership is something I’m incredibly proud of.

I also believe restaurant owners should support one another instead of treating everyone as competition. Whether it’s sharing resources, helping during difficult situations or simply exchanging ideas, a strong community benefits everyone. Tough times truly show the strength of relationships.

Q. Has there been a customer experience that has stayed with you throughout your journey?

Yes, and it’s probably one of the biggest lessons I’ve learnt as an entrepreneur.

We had accepted an order for a large celebration cake and had already begun preparing it when an unexpected medical emergency arose in my family. It was the first time I had found myself in such a difficult situation, where my professional responsibility and a personal crisis collided.
For a moment, I didn’t know how to handle it. But instead of making excuses or avoiding the conversation, I decided to tell the customer the truth. I explained the situation honestly and transparently.
To my surprise, the customer responded with incredible kindness. They weren’t upset or angry. Instead, they understood the circumstances and appreciated the honesty.

That incident has stayed with me ever since. It taught me that people value sincerity far more than perfection. Honest communication builds trust, and sometimes simply telling the truth is the best solution.

Q. If Baker’s Blend had a personality, how would you describe it?

Warm. Welcoming. Calm.

Those three words reflect everything we try to create here.

Q. If you could invite three guests to Baker’s Blend, one from the past, one from the present and one from the future, who would they be?

From the past, I would invite my grandfather. He was my biggest cheerleader. I wish he could have seen this journey and witnessed what Baker’s Blend has become.

From the present, I would invite critics. Honest criticism helps you improve. They point out things you might overlook, and that’s how a business grows stronger.

From the future, I would invite the next generation of children and young people. They know exactly what they like and what they don’t. They’re expressive, curious and honest. Understanding them is important.

Q. What keeps you motivated every single day?

Patience, discipline and consistency.

Success doesn’t happen overnight. You have to keep showing up every day, keep learning and never stop improving.

One thing I always tell myself is that the customer should never experience the chaos happening behind the scenes. No matter how busy the kitchen is or what challenges we’re facing internally, the table should always be perfect when the food reaches the guest. That’s the standard we strive for every day.
